S. Sebastiano was born in 1960 for the production of Grana Padano and working cream: since then the great spirit of cooperation, together with the rigorous and precise production of the valuable first matter, the milk, has characterized our cheese, which is marked by two considerable prerogative: quality and tradition.
Through natural changes and evolutions, today S. Sebastiano counts 30 members that brings there their milk, and produces more than 500.000 quintals of milk per year, which correspond to more than 100.000 Grana Padano wheels: the firm extends on a place of 30.000 m2 and it is one of the main reality in this field in the province of Mantova, privileged place for producing milk which will be transformed in Grana Padano DOP. In the area of Mantova - exactly between Mincio river valley and the Garda moraines - we can accordingly find the "Prati Stabili" (Steady Meadows). They are traditionally non cultivated meadows centuries-old, maintained exclusively by mowing and sometimes manuring. There is no need to effectuate artificial sowing because the life of this meadows is guaranteed by natural mechanisms. Moreover, these meadows assure a very good mix of herbs and hay, which is a complete and harmonic fodder for cows. Grana Padano of "Prati Stabili" is a cheese characterized by the big brand (Grana Padano) which identifies the product and by the particular product brand (Grana of Prati Stabili) which identifies the most typical production of Grana Padano.
The recent building of the new dairy (1997), provided with equipments in the van within the technology and the alimentary health, perfectly units to the secrets and to the traditions of Grana Padano DOP with great quality and, thanks to its organoleptic characteristics, it can reach long periods of seasoning (18-24 months).
Starting from January 2004, a new manifacturing system has been inaugurated, which will allow to offer the Grana Padano MN 437 vacuum pasked, in modifies atmosphere, grated and in cubes. All the phases of the productive process (from the milk picking to the creation of the cheese) are always controlled by the Dairy staff.
S. Sebastiano cooperative is certified ISO 9001:2000 since 1998 and it is going to achieve the certification ISO 14000, as it is going to take the certification as productive "filiera" according to the rule UNI 10939:2001.
From the milk coming from "Prati Stabili", directly to the customers’ tables, the S. Sebastiano Grana Padano is a synonim of superior cheese, natural and guaranteed. |
