The Mantua salami, as it is known today, is the result of centuries worth of tradition being handed down through the generations.
It is prepared at the beginning of winter using pork; garlic and spices are added for flavour.
It is then aged 2-3 months.

Along with pumpkin and rice; salami is the symbol of the surrounding lands.
