Originating in Asia, rice diffused toward the West around the 1st century B.C.
The cultivation of rice in Italy began between the late 14th and early 15th century, near Milan and Vercelli.
The introduction to Mantua crops came not long after.
Rice is planted in April and harvested in October. This grain contains protein, vitamins, calcium, phosphorus, potassium and starch. Because it does not contain gluten this cereal is appropriate for infants and also low-sodium diets.
Rice flour is used externally to sooth skin irritations. In the kitchen its use is varied from hors d'oeuvres to desserts. |
